Garlic Scape Butter

This easy homemade garlic scape butter is one of my favorite ways to preserve fresh garlic scapes from the garden. Blended with creamy butter and a touch of lemon, it's perfect for spreading on warm sourdough bread, melting over grilled steaks, or tossing with roasted vegetables. This simple recipe is a delicious way to make the most of your garlic harvest.

Ingredients
  

  • 1 Cup fresh garlic scapes roughly chopped
  • 1 Cup softened butter
  • 1 tsp lemon juice
  • parmesan cheese or red pepper flakes (optional add-ins for extra flavor)

Method
 

  1. Wash your garlic scapes thoroughly and trim off the woody ends.
  2. Roughly chop the scapes into smaller pieces.
  3. Add the garlic scapes to a food processor and pulse until they are finely minced.
  4. Add the softened butter, lemon juice, and any optional inclusions.
  5. Blend until everything is evenly mixed.
  6. Taste and adjust seasoning as needed.
